WHAT YOU NEED:

250g of sweetened condensed milk

250g of icing sugar (sometimes called powdered or royal icing), sifted, plus extra for dusting

200g of desiccated coconut (finely grounded shredded coconut)

HOW TO MAKE (Tray for 10-12 square slices):

With a wooden spoon, mix together your condensed milk with icing sugar in a large mixing bowl. Once very stiff, add the coconut shreds in slowly until it’s fully combined. You may also want to use your hand to mix.

Then divide the mix into two and slowly place a very tiny amount, usually 1-2 drops of food colouring into both mixes, the choice is yours and then dust a clean and dried icing board, add the one half of the mix, and roll into a square until you have a slab about 3 cm thick.

Transfer into a non-stick tin with parchment paper and set for 4-8 hours and then cut into squares.

Don’t forget to place in an airtight container and it can be stored for up to a month and ENJOY!
