Here are a few simple recipes and remember, if you know a good recipe, and want to share it, email us at hello@todayonline.uk.
WHAT YOU NEED:
1 tablespoon of olive oil
2 carrots, chopped
1 large onion, chopped finely
1 litre of vegetable stock, or 1 litre of warm water with 2-3 stock cubes dissolved
400g can of chopped tomatoes
200g of frozen vegetables of peas
250g of fresh tortellini, you can use any dried pasta if you wish
Grated parmesan, to decorate
HOW TO MAKE:
Heat oil in a pan and then fry the carrots and onions until golden brown, this usually takes 5 mins or so and the add the stock and tomatoes and gently simmer for 10 minutes.
Add the frozen vegetables halfway into the 10 minutes mark.
If using the fresh tortellini, add in and simmer for 2 minutes, but if you are using dry pasta, cook separately until soft and then add into the soup recipe/
You can also add herbs, like basil, rosemary etc to flavour, and then add into bowls and grate a bit of parmesan to flavour.
This recipe also goes well with fresh garlic bread.
