
You can make a quick, flavourful British-style chilli con carne in about 30 minutes using simple supermarket ingredients.

INGREDIENTS:
1 tbsp vegetable or olive oil
500g lean beef mince
1 large onion, finely diced
2 cloves garlic, crushed
1 red pepper, chopped (optional)
1–2 tsp mild or hot chilli powder (to taste)
1 tsp smoked paprika
400g tin chopped tomatoes
2 tbsp tomato purée
300ml beef stock (made with 1 stock cube)
400g tin red kidney beans, drained and rinsed
HOW TO PREPARE:
Brown the beef and onions: Heat the oil in a large saucepan over medium heat. Add the minced beef and diced onion. Cook for 5 minutes, breaking up the meat with a wooden spoon until browned.
Add aromatics and spices: Stir in the garlic, red pepper, chilli powder, cumin, and smoked paprika. Cook for 1 to 2 minutes until fragrant.
Simmer the sauce: Pour in the chopped tomatoes, tomato purée, beef stock, sugar (or chocolate), and a pinch of salt and pepper. Bring to the boil, then reduce the heat to low. Cover and simmer gently for 20 minutes.
Add the beans: Stir in the drained kidney beans and cook uncovered for another 5 to 10 minutes until piping hot and the sauce is thick.
Serve: Taste to adjust the seasoning. Serve hot with plain long-grain rice, soured cream, or tortilla chips.
